They're pretty much a southern thing, I think....some folks make only mediocre ones, but my buddy has it down pat....crunchy spicy cheesy finger food....those in the pic will be long gone, when the g'kids return tonite, and get into them. ;)

Ha, yep some of them do look like caterpillars....actually, they're suppose to be straight, but he squeezes them out of one of those cake decorator tube thingys, onto a baking sheet tray, and some of them will curl up like that. ;)

Sorry, guys, I stand corrected, they are not deep-fried....they are baked for only a few minutes, which makes them even simpler to make, and healthier, as well.....I'm gonna try making some, myself....easy peasy. ;)

Here's the recipe; very easy and simple to prepare:

Mississippi Delta Cheese Straws

2 cups self-rising flour
2 cups shredded sharp cheddar cheese, room temp.
1/3 teaspoon cayenne pepper
1/8 teaspoon salt
1 cup butter, room temp.

Preheat oven to 350°. Blend sifted flour, cayenne and salt. Then, in separate bowl, blend together the butter and cheese. Then, blend in the flour mixture until creamy consistency.

Place finished mixture into a cake or cookie decorator, with a star tip, and squeeze out 3-inch-long cheese straws onto an ungreased cookie sheet.

Bake 10 to 12 minutes until light brown. One recipe will make approximately 4-5 dozen.

Actually I have some ghost pepper salt my son Dan brought to me over Thanksgiving. A little of that magic dust might be appropriate.

My wife had a pretty good idea, if you don't have a cake decorator thingy....she said to just roll the mixture out into a sheet like you would making biscuits, and slice into 3 inch pieces, then bake them.

They prolly won't look like cattypillers, however. ;)
