Beef short ribs today. 2-3 hours of smoke and then I'll bump up the temperature, throw them a Dutch oven and braise them in some beer and balsamic vinegar for a couple of hours.https://uploads.tapatalk-cdn.com/20170304/cf5cae176435aa70f736c8ece2df06e3.jpg

It's just Montreal Steak Seasoning. As long as you're not too heavy handed, it works pretty well on beef ribs. (Both beef short ribs like these or beef baby backs.)

Looks like you drug them through the parking lot before put them on the grill. I hate all those little gravels and shit they are putting on steaks now. I always tell them when I order a steak to make sure none of that shit is on my steak. They put that crap on there to try to make a cheap cut of meat taste better.
A shitty cut of meat is a shitty cut of meat. Dragging it through the parking lot before cooking it don't help...

Ribs, by definition, and smoking/BBQ, historically, were ways to make a cheap cut of meat more tender. I guess Larke can stick to ketchup...

Ha! If that's a positive post, I'd hate to see a negative one! Are you and P-hole both competing for Bucky's curmudgeon status?

So, I'm now assuming you DO like having your RIBS dragged through the parking lot? Correct? :poke

Since Bucky curmudgeoned himself out of the official Good Hunting hierarchy, his old badge is up for grabs. So far, it seems P-hole and Cappy are neck and neck for the honors. Time will tell.

Bite me.
I could win it hands down. All I'd have to do is say I use ketchup on steak.....
Nah, that's to much like cheating.

My braising sauce

1 medium onion, chopped
2 carrots, chopped
1 large tomato, quartered
3 ribs celery
1/2 head garlic, peeled
2 cups of broth
1 1/2 cup of red wine

Place the onion, garlic, celery, carrot, and tomato into a food processor and blend until you reach a consistent, smooth pulp.
Take a large Dutch oven and place over medium-high heat. Next add the vegetable pulp, season with salt and pepper, to taste, and cook for about 10 minutes. Pour in the red wine and stock and bring it to a boil. Using tongs take the ribs and put them into the braising mix; the liquid should just about cover the meat. Place the lid loosely on top, reduce heat to a simmer and cook until the meat is very tender, approximately 2 1/2 to 3 hours.
When the ribs are about finished, remove about 1 to 2 cups of liquid and strain into a small saucepan over medium-high heat. Heat the sauce until slightly reduced and thickened.

The sauce is absolutely wonderful. The recipe calls for straining the sauce but I prefer to eat it pulp and all
