There is a really good hot sauce in Belize made by a company called Marie Sharps. I tried them all but my favorite was a carrot based sauce mixed with habaneros for heat. It made for a sweet, fiery hot sauce that wasn't overly vinegary. I'd honestly never thought of using a vegetable base. Now I got some experimenting to do. Any willing volunteers? I won't even ask you to sign a release.

The batch of habanero I made last summer I used carrot as the base. Lots of recipes on the web.
