It's what's for lunch at my home/office today. With both shrimp and sausage in it.

And a whole dang stick of butter.

Dang it! A skosh too salty. And that's my fault because I added a little Tony's to jazz it up a smidge. Man, since I've been cutting down on salt, its like I can taste it if the shaker gets near my food.

That sucks.

I hate salt.
And I can't get near Jambalaya unless I eat it in the bathroom and have my mail delivered there (unless it's Saturday).

Odd you should mention cajun food....just yesterday, a friend of wifey's sent this to her....might try it this weekend at the lakehouse:



Turkey Gumbo

½ C. olive oil

3 medium onions, chopped

3 ribs celery with tops, chopped

3 T. cilantro, chopped

1 ½ T. ground cumin

2 t. turmeric

1/12 t. black pepper

1 ½ t. tobasco

3 t. Worcestershire Sauce

1T. salt

8-10 bay leaves

3 cans stewed tomatoes

1 can corn, drained

3 cans chicken broth

1 ½ bags frozen cut okra

3 large smoked sausages, cut in ¾ slices

3 cups or more of cooked and boned turkey meat(or chicken or shrimp)

In large stew pot on medium heat: Sauté onions, celery, in olive oil until translucent. Add cilantro and stir it in to wilt. Add cumin, black pepper, turmeric, and salt and stir. Add tomatoes, tobasco and Worcestershire sauce and stir. Add all other ingredients, stir, bring to boil. Reduce heat, cover and simmer on low heat for 45 minutes. Serve over rice.
