Anyone ever fool around with this method? Saw it on a cast-iron site. Basically, coat meat pretty well in salt (sea salt or Kosher) Let sit 1 hour for each inch of thickness. Wash off salt and dry steak - really *dry* it - as in paper towels. Season it as you wish (don't use anymore salt). Cook. I did an arm roast tonite on the grill. 2" thick.. Set in salt for 2 hrs - cooked it for about 45 minutes. Let it rest for 10 minutes. Medium rare and just freaking spectacular.

I ate too much. Had to have a little schnapps to settle my stomach.

I've seen it done where you cook the food encased in salt, which makes for some very tasty fish.

Now that you mention it Baseball ... I think that's what Lynn did. She had to whack it with a mallet to break the "shell" off of it or something. (?) I don't remember persactly, something weird like that. I try not to venture into the kitchen much until I'm called for supper, so I don't pay much attention to HOW things are cooked ... I only worry about how I'm gonna eat 'em! ;)

Guy at camp, his girlfriend made a "prime rib roast" doing that, and brought it to us one year.

I guess it was ok. I don't like salt, though.

Heathens.

I cooked steak au poivre tonight, used Worcestershire sauce instead of wine in the sauce and heavy cream instead of half and half. Most excellent. Roasted veggies on the side.

That does sound good. Meat crusted in pepper can be tricky to cook without burning the pepper but your patience will be rewarded.

Prolly why you find it necessary to use ketchup on your steak.:D
