Since some seem to think we've been spending too much time talking about ball games, I thought is chance the subject to...cooking!

I decided to spatchcock a chicken last night an here's the results. Over on the Eastern Shore a lot of the VFD's do road side BBQ's to raise money from the folks going home from the beach. I've been trying to match the flavor for years. I'm getting closer, but it's still a work in process. (I end up cutting them in half as they're easier to work with on the grill.)

Hank, isn't a spatchcock chicken one with the bones removed? I'm not at all familiar with how that's done or what it does for the flavor.
Can you splain?

I "think" spatchcock is an old English term for butter flying a bird. You start by cutting the backbone out with some kitchen shears and then I was taught to remove the sternum. I think the main advantage is uniformity in cooking and more surface area to soak up your marinade or rub. It sounds complicated, but it only takes five minutes and there are videos in YouTube.

Yes, the ribs stay in. But, thinking about it I may try to remove them as well next time and see what happens.
