...I put two 11+ pound turkeys in the brine last night and will be smoking them tomorrow. I've made jerky in my smoker, have done up ribs, and a good number of butts but this is my first try at doing up a turkey. Probably should have tried one first but figured since I had the time let's screw up two of them instead.
