I don't know what's crazier, some health inspector questioning whether Coons are "food" or the fact that they're charging $10/lb for it. Either way, you need to find a wholesaler who supplies Chinese markets. Forget the damn hides.

Coon is really good eating. I just a fried a young one first of the week. Browned, steamed in the D.O. biscuits, gravy and wild rice.. Good chewing. There actually is a market for them locally. A lot of the guys are selling carcasses anywhere from $3 to 10 bucks. I skin everything in the timber and don't have the freezer space to stockpile a bunch. I should be playing all the angles though.. Saw a website the other day that was asking $10 for a baculum. :D
