Yuck. I hate ducks that way. I have lots of hate.

Eat duck breast only. Breast 'em out. Soak breasts in covered dish in refrig covered in Italian Dressing, for four hours. Take out, wrap in bacon, and grill. Do not overcook.

I hate brandy.

We drink brandy in the duck blind. A toast to each duck that falls. Always have. That's as close as we get to brandy on a duck.... Shoot the limit, then find someone that will clean and keep the flying livers.
Then we switch to brown likker and go to supper somewhere.

Now I can do a real job on Peking Duck (Muscovy) ... but I've tried wild duck (that friends have killed) a variety of ways and I reached the conclusion, no matter what you do to 'em, it's unlikely the dogs would even touch 'em!

Now, I've killed a bazillion wild turkeys (the two legged kind) and I'm pretty much like Bucky on those, breast 'em out and throw the rest away.

I wonder why pintails aren't coming back? I love those chocolate brown headed little flying rats. Think its the Mexicans? We ought to kill comorants until they stop allowing American hunters to come down and kill the hundreds of thousands of pintails they do.
