I have two peach trees that I grew from seed, or pits whatever, and this year they are bearing big time. At least the one that isn't near enough to the fence that the squirrels can get to easily. They've taken every damned peach off of that tree. These are 'Indian peaches' otherwise maybe known as 'blood peaches' elsewhere. They are a little smaller peach and have dark red flesh when they are ripe.

The skins are turning red on these but the peaches themselves are still pretty hard and not quite ripe. There's a few ripe ons on the tree and I've tried them and they're scrumptious. I plan on making some peach preserves with what I can get off that tree and maybe a cobbler or two. Or three.

Anyways, being a peach novice, I am wondering, do I pick these now and let them ripen a bit after I pick them or do I let them fully ripen on the tree? That is if the damed tree rats leave me any. who knows peach fuzz better'n anybody?

Here's what they look like now.

Nearly all commercially-grown peaches, as well as most fruits and vegetables, are picked before ripening....so, pick them, and place them in brown paper grocery sacks, but only a few in each sack, as the weight from the top ones will mash the lower ones....put in just enough to cover the bottom of the sack, then roll the top of the sack down, and store at room temp....keep a check on them, and remove the ripe ones.

This post confuses me.

I would have thought, for certain, you'd own a homemade ice cream machine.

I don't kiss and tell. Besides, I was a gentleman and waited until the second date. :D

Naaa, seriously, I think I was 15 years old then ... just makin' out was a big thing in those days.

I asked her how the town got the name of Climax and she told me it was a tiny, little one-horse town, just a crossroads on the map, but the intersection was at the very top (climax) of a hill. There was a flashing light at the intersection ... the only traffic light in town.

Ha! Out of curiosity, I Googled it. I'll say it was a SMALL town! Total Area: 0.8 sq mi!! ('Course, I'm talkin' back in 1967 when I dated her)

Profile: Climax, GA 39834
Incorporated Date: January 1, 1905
Population: 280
Total Area: 0.8 sq mi

Climax is the highest point on the railroad between Savannah and the Chattahoochee River. After its founding in the 1880s, the town served as a rail junction and an agricultural community. It later incorporated in 1905.

For many years Climax flourished, its businesses, churches, hotels, and services sustaining the community. With the coming of paved highways and the cutback of rail services, however, the town's economic strength declined.

In order to thwart the hijacking attempts. I'd pick 'em and let them ripen. It sure works with the supply chain to my grocery store. I buy the hard ones (shut up thumper) and set them out in our fruit bowl until they give just a tiny but when squozededed. Perfect!

I'll do the math for you, Cap:

20 miles x 5,280 feet per mile = 105,600 feet x 12 inches per foot = 1,267,200 total inches -:- 6 inches per stroke(just a wild-azzed guess here) = 211,200 strokes....that's a lotta pipe!!!
You da man, Cap!!!!!.....day'um, I'm getting tired, just thinking about it!!! ;)

You'd be more tired if you knew the real math....
Replace the 6 inches for 2 1/2.
