Went to a new Sushi place last Friday. All in all I would give it great reviews:

Started with an appetizer of Geoduck

Broiled and made with a peanut sauce and sauteed wild mushrooms (very good)

Then moved on to some Sashimi - OhToro

Probably my favorite of all Sushi. This was the best I've had in the states, amazingly fatty and melted.

Finally finished it off with some Ikura

Again all in all a fantastic Sushi restaurant

Souse is pickled meat and trimmings usually made from pig's feet, chicken feet or cow's tongue, to name a few. The cooked meat or trimmings are cut into bite-sized pieces and soaked in a brine made of water, lime juice, cucumbers, hot pepper, salt and specially prepared seasonings.

souse meat (hoghead cheese) is purty good stuff as is sushi and sashimi. HAM hocks are smoked and cooked in beans or greens. Pig feet and ears are pickled.
