Butt's in the smoker

Got a 7 1/2 pound butt in the smoker. Been in 3 1/2 hours between 225-240

She ain't dripped a drop yet.... Drip pan dry as a bone.

I'm getting impatient.

My neighbor ha been running his all day and the smell of cooking pork fat and hickory smoke is about to drive me to distraction. We're headed to the in-laws so I'll be stuck with burgers and BBQ chicken.

what kind of wood do you use? Is that a Masterbuilt smoker?

It's an electric smoker with a thermostat.

I used Apple on this... My wife isn't much on strong smokey flavor.

Another hour I'm pulling it off and it's going into foil, and into a small cooler until we get back home late tonight.

I just put ahi steaks on the grill, have some fresh mango salsa, and a big fresh salad to go with it.

I felt guilty for eating that big Thursday night ribeye.
