Got the house to myself tonite....fried up some fresh channel cat fillets, dove breasts, and taters.

Watch a little football, and a long nap. ;)

What kind of breading do you southerners use for catfish? Looks yummy!

Fido, I use the House Autry....it's usually available at WalMart, if they're not already sold out, as it must be real popular....and, it's made right up there in Cappy's area, in Four Oaks, NC....good stuff, highly recommend it.

One thing I've learned about frying fish is, make sure the fish is completely dry before applying the breading....otherwise, when frying, the breading will get too hard, and there will be lots of the breading to come off, to mess up your oil.
