    unlike many, extra lean burgers are not my fav. I prefer about 73% lean if I'm grilling. When I eat a burger I want the juices to run down both sides of my mouth. Fat and medium rare is the perfect burger. Add some hand sliced fries with the skin on and it's better than sex

    Disclaimer: that doesn't mean I won't jump all over a lean burger and tater tots, I'm not a burger snob

    I’ve never been able to get ground venison to hang together enough to make a decent burger. And bread crumbs in birger ain’t in it for me.

    Maybe RT knows the magic ingredient!

    You should have fried an egg and put on top of that burger and bacon.

    Anytime I made ground venison, I'd throw in 15%-20% beef fat. (My buddy knew a butcher in town who'd keep him supplied with all the beef fat he needed) I don't like an "overly" lean burger.

    I’ve ground it with bacon, and it makes a damn good burger. But then you are sorta limited on what you can do with the meat.... basically just burgers. We like to use it for spaghetti, chili, whatnot.
    I grind in around 10% beef fat. Kroger is the only store around here that still cuts their own meat, so that’s where I go.

    Also - these weren’t grilled, more smoked... I didn’t use enough charcoal so the grill never got above 275

    Also that bacon was laying on top of said burgers during the cooking process. Once the burgers were almost done I threw them on the top rack and let the bacon crisp up.

    Cappy - we said the same damn thing while we were eating them. “We should have a big runny egg on this!”
