Ya' know sumpin'? I've probably eaten about every critter out there at one time or another, but I'll be darned if I can remember ever having beaver ... well, at least not like the critter you posted above.I guess I just never thought about it before. How's it taste HH? Mild and pretty much tastes like what you season it with? Strong? I'm clueless, but I guess they're nothing but giant rodents! I'll admit I've eaten rat and of course squirrel (tasted the same imo), but I'll be darned if I can remember trying beaver.
