    I was in heaven last night!

    Every year, around Christmas, two of the major chain grocery stores have a sale on prime rib. One is at $6.99/lb. and the other is $7.99/lb. (The $7.99 might be boneless, can’t remember)

    Anyway, Lynn picked up one of the $6.99 rib roasts yesterday and served it for dinner last night. I started out with a nice salad (forgot to take a pic), then she brought out my baked ‘tater and prime rib! (I told her not to bother with dinner rolls as they’d just be filler!)

    Anyway, the roast was PERFECTLY cooked and was consistent all the way through. There was no difference between an end cut and a center cut. Dang was it good! (I had three slices!) We only ate about 1/4 of the roast, so I have plenty of leftovers.

    I'm not the biggest fan of prime rib but the potato looks delicious. When you're diabetic you can eat meat but a buttered baked potato is prime eats to me. I'd rather have a pan seared ribeye myself

    Yep, these two stores have the same sale every year. We normally buy 3-4 of these roasts and have the butcher cut a couple of them up into ribeyes. This year, we have no extra freezer space. We hate to freeze beef like this anyway as we don’t have one of those vacuum pack machine thingies. I like a good ribeye, but she makes a standing rib roast a couple times a year as a treat for me. I don’t argue with her and take whatever she throws in front of me. The only time I enter a kitchen is to carry my empty plate in for a refill. Ol’ Captain and I shared the same philosophy regarding “kitchen work”.

    I've NEVER seen prime rib that cheap around here.

    On another note I just finished supper an hour ago, but seeing that perfectly cook meal has me thinking I'm hungry all over again.

    We had sloppy joes and bad vikings football for supper. Might be the reason for my indigestion.
    Watching the Vikes always makes me think of my old buddy Bassdog. He was buried in a Fran T jersey.
