Wedding tomorrow... and as much time with Lucia as I can possibly manage. And fish, I wanna fish, too.

Wifey is fixing taco soup for supper....does that count???

I don't much care for the stuff, and really haven't gotten over the first time I ate it....it was several years ago, elk hunting on top of Uncompahgre Mountain at 9,500 ft. outside of Montrose, Colo....one of the guys in our group was the self-appointed camp cook....problem was, he did LOTS more whiskey-drinking, than cooking.

He had brought some venison burger with him from his home, here in MS....unknown to the rest of us at the time, that raw unfrozen meat had made the 2-1/2 day, 1,500 mile trip to Montrose, riding in his truck tool box in a big ziplock bag.

The dumbazz added it to the big stewpot of taco soup that he had made for our first supper meal....that spoiled meat day'um near sent us all to the hospital....we had to dig a second latrine further down the mountain 'cause we filled up the first one, and couldn't stand the smell!!!

Pretty much turned me off taco soup.

Taco soup is wonderful. Kind of a thick creamy chili.

    2 pounds ground beef
    1 envelope taco seasoning
    1-1/2 cups water
    1 can chili beans,
    1 can whole kernel corn,
    1 can pinto beans,
    1 can diced tomatoes
    1 can Rotel
1 can (4 ounces) chopped green chilies,
    1 envelope ranch dressing mix

Add as much cheese or sour cream as you like. Makes a great taco salad

If this stinking rain will hold off today I am hoping to grill some marinated chicken breasts and some kielbasa.
