Barry, speaking of blackened, have you noticed, that when blacken thing started many years ago that all the seasoning what black, now if you buy blackening seasoning it mostly red in color......?

Its awesome on ahi steaks. I'm not a redfish fan. Its also good on a steak but I won't use it on an expensive one.
Old Bay blackened seasoning is my favorite for yellowfin steaks.

Just ate at his restaurant a couple of weeks ago when we were in NOLA and it was mighty tasty.
I believe he is the gent who came up with the turducken idea also.
